Description

Butter straight from the fridge tears bread. Butter left out in an open dish goes hard at the edges and picks up whatever else is on the counter. A French butter crock — a butter bell, a butter keeper — answers both with water.

How to Use

Pack softened butter firmly into the bell, pressing out the air pockets, and level it off at the rim. Pour about an inch of cold water into the base. Set the bell into the base so the butter hangs above the water — the water sits against the rim of the bell and forms the barrier that keeps air off the butter.

Change the water every two to three days, and wash both pieces when you refill. Keep the crock out of direct sun and away from the stove. In a warm kitchen — much above 75°F — pack a little less butter and change the water daily.
