Description

Crafted in Mexico, this cast iron tortilla press is the honest way to make tortillas at home. A round 6.5″ plate, a lever, and enough weight to do the work for you — a tortilladora built the way they have always been built.

How to Use

Mix your masa from masa harina and warm water until it feels like soft clay. Roll a golf-ball-sized piece, set it slightly off-centre on the lower plate between two sheets of plastic — a cut-open freezer bag works best — and bring the lever down with steady pressure rather than a slam. Peel the plastic away, lay the tortilla onto a dry, hot comal or skillet, and give it about sixty seconds a side until it freckles and puffs. Keep them stacked under a clean towel so they steam each other soft.

The same press handles tostadas, sopes, pupusas and arepas.

Materials & Care

Cast iron, with a 6.5″ round pressing plate and a hinged lever arm. The press measures 6.5″ wide × 8.75″ deep × 4.25″ high with the handle down. Made in Mexico.

Wipe it out after pressing and dry it thoroughly — cast iron and standing water are not friends. A very light film of neutral oil after cleaning keeps the surface in good condition between uses. Do not put it in the dishwasher.

Why You'll Love It

A fresh tortilla off a comal is a different food from the ones in a bag — softer, cornier, worth the ten minutes. This press is the piece that makes those ten minutes easy. Cast iron gives you the mass to flatten masa evenly without leaning on it, and there is nothing on it to wear out: no springs, no coating, no plastic. It is the kind of tool that ends up staying in a family.

Frequently Asked Questions

What size tortilla does it make?
The pressing surface is 6.5″ across, which is the standard taco size — the tortilla you fold in one hand rather than the large one you wrap a burrito in.

Do I need to season it like a skillet?
No — it presses, it does not cook. Keep it dry and give it a light wipe of neutral oil now and then and it will stay in good shape.

Will it make flour tortillas?
It presses them, but flour dough is elastic and tends to spring back. Corn masa is what a press like this is for; flour tortillas usually want a rolling pin.

What else can I press?
Tostadas, sopes, pupusas and arepas all work on the same plate.
