Who Grows It

Monte Azul Foundation is a Puerto Rican 501(c)(3) rebuilding rural agriculture on the island. They grow this coffee in the Cordillera Central, roast it under a Puerto Rico roasting licence, and grind it each time we place an order — not before. The bag says it plainly: every sip supports a farmer, every purchase builds a future.

How to Brew

It arrives at a medium grind, which is what a colador wants. Spoon it into the cloth, pour water just off the boil, and let gravity do the rest — the way it has been done in Puerto Rican kitchens for generations.

The same grind drops straight into a drip basket or a pour-over cone. Monte Azul suggests 200°F water for pour over. For a French press they give a 1:15 coffee-to-water ratio; a medium grind is finer than a press usually takes, so plunge slowly and pour it out rather than letting it stand.
